Basic install process is :

Download Bodhi ISO.
Burn to CD.
Optional : Install rEFIt. (See Ubuntu Mactel Support)
Boot from CD. (Hold down the 'C' key while booting your Mac.)
Install Bodhi.
Enjoy Bodhi.

The CPU in these systems are fully upgradeable to a Core 2 Duo 2.2 GHz. The instructions are over at iFixit. Even with the Core 2 Duo, these Minis will not accept OS X 10.7 Lion.

These Minis have a known issue with Apple Keyboards (A1242, A1243, A1255, A1314. Aluminum keyboards) where in the keyboard is not recognized by the firmware until after the OS begins to boot (In other words, holding down the C key during boot will not work with these keyboards). This is a conflict on the firmware level and Apple is not rumored to be releasing an update to fix this.
